Roasted Sweet Potatoes with Pecans

Sweet potatoes (picked up at both the Food Co-op and Wal-mart)
Simply Natural Tostitos Blue Corn chips (available at Econo, Wal-mart and Target)
Maple Sugar (gift from Marty and Tina)
Roasted Pumpkin Seed oil (Food co-op)
Pecans (wal-mart)
Kosher Salt (wal-mart)
sunflower oil spray (wal-mart)
Maple Syrup (homemade was a gift)

Potatoes
Pre-heat over to 400 degrees

cut, slice and wash sweet potatoes. put in a large bowl
pour 2 of 3 tablespoons of pumpkin seed oil over sweet potatoes
add crushed blue corn chips...maybe 3/4 cup full
add 1 tablespoon of maple sugar
(maybe add salt if you want, but chips are salty already)
mix well - making sure potatoes are covered in oil, crushed chips and spices
spray baking sheet with sunflower spray
place potatoes in single layer
Place baking sheet in oven for 50 minutes
Once they cool a bit, put in serving dish of choice

Pecans (keep over at 400)
once potatoes are out (or you can do the math while potatoes are in)
put pecans on baking sheet and pour maple syrup (maybe 2 or 3 tablespoons) over pecans
Spoon the pecans around to ensure that they are all covered in syrup
layer flat with the spoon
place in oven for 4 minutes
take out of oven and mix up well again on the baking sheet then layer them flat again
place in oven for another 4 minutes
once out...pour them over the potatoes or
simply let them cool and eat as is for a tasty treat
