For a variation of BAKED Polenta fold in:
cooked wild rice
sauted leek bulbs and sauted cattail shoots (saute in sunflower oil)
to the stovetop step, before the corn mixture thickens too much. I did it around the 10 minute mark.
Follow the pouring, spreading, cooling, chilling directions above before baking.
When finished baking, drizzle a little sunflower oil on top, if desired.
