Pecan encrusted whitefish

approximately 3/4 cups of pecans
2 tablespoons of maple sugar
four decent size whitefish fillets
2 duck eggs
sunflower spray

pre-heat oven to 425 degrees

grind up pecans in coffee bean grinder - makes nearly 16 oz of ground pecans. (Consistency is like brown sugar.) Next, add two tablespoons of maple sugar to the ground pecans. Mix well with fork. Mix two duck eggs well for dipping fish. Take out large cookie sheet/baking pan. Spray with sunflower oil.

Dip each fillet of whitefish in the duck egg and place on pan skin down. Spoon out pecan sugar mixture over the top of the fish. Spread out to cover all of the fillets equally (I used my fingers, but I'm sure a fork will do). Place in the oven and let cook for 20 minutes.

I found that the skin of the fillet didn't come off of the pan so easily. So I had to soak for a bit. I'm not sure if this is because of the sunflower oil. Overall it tasted super good so I wasn't worried about a bit of clean up.
