Pumpkin/Corn Pancakes

1 cup pumpkin seed flour
1 cup corn meal
¼ cup sunflower oil
1 cup boiling water
2 tsp sea salt

Mix the pumpkin seed flour, the corn meal, and the sea salt in a mixing bowl. Heat water to a boil, and mix with sunflower oil in a cup. Pour water/oil into flour mix and mix well. Heat frying pan to medium and pour about ½ cup for each pancake. Wait until the edges of the pancake bubble and the use the spatula around the edges to make sure the pancake doesn’t stick. Then flip and check after about 10 seconds. Makes about eight pancakes.

Thanks, Marty. How about the pumpkin seed flour? Is that just ground seeds?

Yes, it is ground shelled pumpkin seeds. I got them at the Coop.
