Crock Pot Cranberry Turkey
Did this overnight and my husband woke me to at 2:20 am to say "something smells like it is burning." Argh! It was probably the cranberries. Next time I'll pour in the cranberries last.
Four turkey breasts
3/4 cup of cranberries and juice (from marty)
1/2 cup of frozen sunchokes
two very large sweet potatoes (very large)...cleaned cut up and placed on bottom
roasted pumpkin seed oil
2 tablespoons of maple cream
1 cup o water
place sweet potatoes in first, pour cranberries and juice in next. break up frozen sunchokes and spread around in pot, pour in water, drop in dollaprs of maple cream, place turkey breast over everything and sprinkle salt and sweet fern over turkey and then pour pumpkin seed oil - enough to cover each of the turkey breast. Let sit on low for six hours.
