This is a really nice recipe and I couldn't have done it without the crabapple sauce that was leftover from our events. Unfortunately, I didn't write this down right away so I am guessing about specific measurements. ;-)
five medium sweet potatoes
1/3 cup of maple sugar (maybe more)
1/4 cup of maple syrup
two tablespoons of roasted pumpkin seed oil
1/4 cup of cranapple sauce
Clean and peel up sweet potatoes. Cut up into small pieces and boil until soft (sprinkle in sugar). Don't wait for potatoes to go too long..you don't want them to be mushy. Drain out water (I saved mine in jars and used it to make some wild rice for a different flavor...that was not bad). With a hand mixer add other ingreditents and serve warm. Holy crap this was excellent.
