Chef Kibit's Salad Dressing
The vinaigrette recipe from the Board of Trustees dinner is:
16 oz vinegar
8 oz crabapple sauce
2 tsp inulin powder
6 tsp sumac tea
Mixed together and SLOWLY add 16 oz. sunflower oil.
I got to taste this concoction before the NMU Board meeting, while the chef was adding ingredients and blending and tasting. It was fun to see the dressing happen. What the heck is inulin?
