This is a hearty, but healthy cookie. It is fruit sweetened and would make a good on-the-go breakfast item.
-1 1/2 cups pumpkin puree
-2 cups flour (corn, pumpkin seed, etc) *I used corn flour, so it made it very dense. Still tasty though!
-1 1/2 cups chopped prunes. *Can reduce this according to taste.
-3/4 chopped DDP nuts
-1/2 teaspoon salt
Mix wet and dry ingredients seperately then combine. Drop onto greased baking sheet and flatten slightly. Bake at 350 for 30-35 minutes or until they look done.
*You could also substitute crabapple sauce for the pumpkin puree. Or any other fruit puree. You basically just need something moist to mix the rest of the ingredients.
