Here's a nice treat for a chilly morning. :)
-2 cup grated raw sweet potatoes
-2 T flour (try corn or pumpkin seed, etc)
-2 well beaten eggs (if using duck eggs, you may need to reduce based on their size. Depends on how you like the pancakes. )
-1/2 teaspoon salt
-1 teaspoon sweetener (syrup or maple sugar) *I omitted this and it was just fine.
Add all ingredients and beat well. With spoon, drop mixture on hot, oiled griddle and spread as thinly as possible. Fry on both sides until golden brown. Delicious served with hazelnut butter and maple syrup.
