Bison Roast - 3 lbs
2 tablespoons of Kosher Salt
1 1/2 cups Cranberry juice
1/2 cup maple sugar
Mix juice and sugar together first.
Suggested step. Marinate the roast in cranberry juice/maple sugar overnight if you can (I didn't but this was still awesome)
layer the bottom of the crock pot with cleaned sun chokes (kept the skin on)
Rub salt all over the roast
Place the roast on the sun chokes.
Pour 1.5 cups of cranberry juice/maple sugar mixture over the roast.
Place on low in the crock pot for at least six hours. Try to baste the roast as often as possible to keep juicy.
This was very tender. Not a lot of ingredients but very tasty. The sun chokes ended up tasting like pearl onions but had the consistency of a potato. Excellent!
